Client detail — see intake consents & check-in categories

The coach client detail now surfaces more of what the client submitted:

• Consent record. The Overview tab shows which consents the client accepted at intake — Terms, Privacy, and Health-data — with the date, so you can confirm onboarding and GDPR consent at a glance.
• Check-in categories. Each check-in in the Progress tab now shows its category tag (injury, nutrition, mobility, mental, …), so you can scan what a note is about without reading every line.
